Recipes: Squash & Potato Gratin

These days, I’m having the time to try new recipes & do experiments in my kitchen. Whenever I find a recipe on the internet, I usually change it a bit, to have my own personal touch πŸ˜‰

Original Recipe:Β Butternut Squash Gratin

This recipe is very easy to make, I just changed few things, instead of using 3 cups of butternut squash, I used 2 cups & 1 cup potato. & instead of the dried thyme, I used dried oregano & rosemary πŸ˜‰


Mix bread crumbs with cheddar cheese & butter … set aside

Sautee onion with olive oil over medium low heat & add salt, pepper, garlic, dried oregano & rosemary … spread on a pyrex/baking dish

Mix the flour with the squash, potato & add parmesan cheese with dried oregano & rosemary … add the mixture over the onion.

Add half cup of chicken broth in the pan you sauteed the onions in & let it cook for 2 minutes, add it over the squash & potato mixture & then add the cheese crumbs mix … bake for 50/60 minutes!

Time to enjoy a delicious meal πŸ˜€

  3. Looks absolutely delicious! I do this but with Garlic, cheddar cheese, Dutch cheese and cream. The al-amarai cream for cooking is excellent! I will post this weekend and you can see, and definitely next week I’m going to try this.
    Do you power boil the squash first? Or you let everything cook in the oven? Tip for you- if you slice the potatoes very thin and slice them in circular shape rather than cubes, it cooks much quicker, I always power boil mine for ten minutes first.
